What it is

A Lithuanian fried curd cheese designed for the grill — firm enough to hold its shape on hot bars, blistering golden on the outside, soft and squeaky inside. Pre-rubbed with garlic and chilli pepper for the kind of bite that wakes up a barbecue plate.

Grill, griddle or pan-fry until charred, then slide onto warm bread with sliced tomato and herbs. Also works in salads as the protein.
