What it is
Known across the Russian-speaking world as morkovcha, this salad was born when Korean deportees in Soviet Central Asia adapted their kimchi tradition to the carrots available locally. The result — thinly julienned carrots marinated with garlic, vinegar and warm spices — took on a life of its own and became one of the most recognisable ready salads across the former Soviet states.
The carrots are finely julienned, then dressed in hot oil infused with garlic and tossed with vinegar, coriander and a touch of chilli. After marinating, the texture softens just enough while retaining a satisfying crunch.
