What it is
Kharcho is one of the great soups of Georgian cuisine — a deep, warming broth with tender beef, rice, ripe tomato, and the unmistakable fragrance of khmeli-suneli spice blend. Transfer contents to a saucepan and heat over medium heat for 5–7 minutes. Serve hot, garnished with fresh coriander or parsley. Pairs well with lavash or a slice of rye bread.
