What it is
Jonjoli are the young flower buds and shoots of the Caucasian bladdernut (Staphylea colchica), prized in Georgian cuisine for centuries. Sharper and more aromatic than capers, they are harvested in spring and pickled in a salt and vinegar brine to preserve their distinctive bite.
