What it is
Jaunpils Mednieku («Hunter’s») — a Latvian semi-hard cheese cold-smoked over beech wood until the rind takes on a deep amber colour. Firm, savoury, with the kind of smoke that lingers.
Slice for a board with cured sausage, melt onto rye, grate over baked potatoes, or pack a wedge for a cold-weather hike.
