What it is
Mackerel flaps are the belly portion of the fish — naturally the fattiest and most flavourful part. Cut from Atlantic mackerel and hot-smoked at high temperature, they develop a firm yet tender texture and a rich, deep smoky flavour that the leaner fillet simply cannot match.
Hot smoking cooks the fish through completely, so these flaps are ready to eat straight from the pack — as a snack, on dark rye bread, or flaked into salads and pasta.
