What it is
Acacia honey is collected from the blossoms of the black locust tree ( Robinia pseudoacacia ), one of the most prized nectar sources across Eastern Europe. It stands apart from most other honeys: pale gold to almost water-white in colour, with a clean, delicately floral sweetness that lingers without bitterness. Thanks to its exceptionally high fructose content, it stays liquid far longer than other varieties — often remaining runny for a year or more.
Dissolve a teaspoon in warm tea or coffee, drizzle over porridge or plain yoghurt, or spread on a slice of dark rye bread. Because the flavour is mild, it pairs without overpowering — letting the base ingredient shine. It is equally at home in dressings, marinades, and delicate pastry glazes.
