What it is
These herring rolls are a staple of Baltic and Eastern European fish counters. Atlantic herring fillets are rolled around a filling of onion and carrot, then steeped in a spiced sweet-and-sour marinade of spirit vinegar, sugar, and aromatic spices. Served chilled straight from the jar, they are a ready-to-eat appetiser with clean, bright flavour and a pleasingly firm bite.
Pair with dark rye bread, a spoonful of sour cream, and thinly sliced red onion, or serve alongside boiled new potatoes and fresh dill for a satisfying, no-fuss meal.
