What it is
Džiugas, the flagship long-matured hard cheese from Žemaitijos Pienas — aged twelve months in cool cellars until the texture firms, fine tyrosine crystals form, and the flavour goes deep and nutty. Lithuania’s answer to a properly aged hard cheese.
Shave thinly onto a cheese board with honey, grate over pasta or risotto in place of Parmesan, or break off chunks to eat with cured ham and a glass of red wine.
