What it is
Maligiano is a traditional Balkan roasted-vegetable relish made predominantly from green peppers and eggplant. Slower to develop its depth than red aivar, the green version carries a fresher, slightly bitter edge alongside a rich smokiness from the oven-roasted vegetables. It spreads generously over rye bread, pairs with grilled meats and mature cheeses, and works equally well stirred into pasta or used as a dip.
