What it is

On the Latvian label this is Vistas aknu pastēte, vārīta — boiled chicken liver pâté. It comes as a soft 300 g chub in a clipped casing rather than a tub, which is how liver pâté has always been sold across the Baltics. Peel back the casing and it slices cleanly when cold, or spreads like butter once it has had ten minutes out of the fridge.

Chicken liver gives it a gentler, less mineral flavour than the beef-liver version — mild, savoury and creamy rather than sharp. Eat it the way it is eaten in Riga: thick on dark rye or a fresh roll, with a little raw onion, a slice of pickled cucumber, or nothing at all. It also works spread on toast under a poached egg, or thinned with a spoonful of cream as a quick pâté for blinis.

Chicken liver, pork fat, chicken skin, water, pork skin, starch, milk proteins, salt, onion, spices and spice extracts, emulsifier E471, flavour enhancer E621, dextrose, antioxidant E316, preservative E250 (sodium nitrite).
