What it is
Bream (Abramis brama) is a deep-bodied freshwater fish prized across Eastern Europe for its meaty flavour when dried. This whole gutted bream has been salt-cured and then slowly air-dried — a centuries-old method that draws out moisture, firms the flesh, and concentrates the savoury taste.
The ±550 g size is a proper whole fish: good for tearing apart at the table and sharing with cold drinks. The scales and skin are left on, the roe may be present, and the satisfying chewy texture is the point.
