What it is
Dyushes (Duchess) is one of the best-loved lemonades of Soviet childhood. It is named after the Duchesse pear, an old European variety famous for its sweet, perfumed flesh. Chernogolovka's version is golden and strongly carbonated, with a ripe-pear flavour that is sweet, slightly winey, and lifted by a little citrus tartness.
Today's recipe uses apple and pear juice concentrates and artesian water. It is sweetened with a mix of sugar and sweeteners, so it has about half the calories of the old full-sugar version. Serve it well chilled, on its own or over ice. It comes in a 0.5 L glass bottle.
