What it is
Štovēti kāposti — "braised cabbage" — is one of the everyday Latvian sides: sauerkraut slowly cooked down with carrot, a little tomato paste, oil and caraway until it loses the raw sharpness of fresh kraut and gains a soft, gently sweet-and-sour character. Dimdiņi has made it on the farm since the early 1990s.
Warm through and serve under sausages, pork knuckle, or fried bacon and onion. Equally good cold the next day, straight from the jar, alongside a slice of dark rye.
