What it is
Bliny are the quintessential Eastern European thin pancake — lighter than a drop scone, closer in spirit to a French crêpe, but with a distinctly Russian character. Ours are made in small batches using wheat flour, whole eggs, milk, and butter, poured thin on a hot pan until just set and lightly golden at the edges.
Serve them rolled around a spoonful of sour cream and a drizzle of honey, folded with red caviar, or filled with cottage cheese and fruit preserves. Equally good warm from the pan or at room temperature.
Warm briefly in a dry pan or microwave (20–30 seconds). Serve with sour cream, honey, jam, red caviar, or smoked salmon.
