What it is
"Jubiliejinis" (literally "jubilee" or "anniversary") is one of the classic liver pates from Biovela, a long-established Lithuanian meat processor based in Vilkaviskis. Soft cooked pork liver and pork fat are blended with onion, salt and warm baking spices into a smooth spread, then sealed in a small 120 g pot ready to open and serve.
Pop the lid, give the pate a quick stir, and pile it onto fresh dark rye, a buttered baguette or a warm toast. A slice of pickled cucumber, a few rings of red onion or a smear of grainy mustard lifts it further; it also makes a generous filling for sandwiches, a base for canapes at the holiday table, or a quick savoury topping for boiled potatoes. The small jar is sized for one household supper or a Sunday breakfast spread.
