What it is
A premium Baltic preserve made from genuine wild red deer. Generous chunks of venison are slow-stewed in their own juices with sea salt, juniper berries, bay leaf and black pepper until the meat is fork-tender and the broth sets into a dark, lightly gelled glaze. The flavour is deep, foresty and unmistakably gamey, with resinous juniper, a faint sweet-iron note from the lean meat, and almost no fat. Spoon it cold straight from the tin onto dark rye, warm it through over buckwheat or mashed potato, fold it into a hunter’s stew with mushrooms and lingonberry, or use it as a rich filling for pies and pasties.
