What it is
Toplyonoe moloko — baked milk — is whole milk held at a gentle heat for hours until the natural sugars caramelise and the colour deepens to a warm, creamy beige. The taste is rounder and a little sweeter than ordinary milk, with a soft, almost nutty finish.
Drink it chilled straight from the bottle, pour it into coffee or strong black tea, or use it the traditional way: as a base for ryazhenka, in pancakes, syrniki, kasha, and any baking that wants a richer milk note.
