What it is
Kissel is a classic hot drink and dessert from Eastern Europe — somewhere between a fruit cordial and a light starch-set pudding. This cowberry version comes as a compressed 180 g brick. Break off what you need, stir into boiling water, and the starch thickens the mix into a smooth, gently tart, ruby-hued drink. Serve hot as a warming glass or cool it down and eat it chilled as a light dessert. The whole brick makes about one litre.
