What it is
Adjapsandal is a traditional fried vegetable stew found across the South Caucasus — in Armenia, Georgia and Azerbaijan — each region putting its own stamp on the combination of aubergine, sweet pepper, tomato, onion and garlic cooked down in sunflower oil. Arteni's version follows the Armenian style: the vegetables are diced and pan-fried until tender, seasoned with fresh herbs and a touch of spice, then packed at peak flavour. Ready to eat straight from the jar, warm or at room temperature, and equally useful as a side dish, a spread on bread, or a base for eggs.
