What it is
Ardealul «De Porc» is a 300 g tin of cooked pure pork meat from Transylvania — the kind of cupboard staple every Romanian household keeps for picnics, camping trips and unhurried weekend lunches. Ardealul, based in Hargita county, has been canning pork in the Carpathian tradition for decades: pork meat is simmered with a touch of natural fat, salt and spice, then sealed into the tin and heat-treated so the contents keep without refrigeration until opened. What comes out of the can is tender, lightly salted, mildly seasoned pork with its own savoury jelly — nothing else added.
Open the tin and you can eat the meat straight away: spread thickly on fresh rye bread with mustard and pickles, fork it onto a plate next to a fried egg, or pile it into a baguette with sliced tomato and raw onion for a quick lunch. It is equally happy in a hot pan: warm it through with chopped onion and paprika for a five-minute hash, fold it into scrambled eggs, scatter it over baked potatoes, or stir it into beans, lentils or a simple cabbage stew to give the pot some real backbone.
