What it is
Gardums is a hot-smoked chicken roulade from Gaļas nams Ādaži, a Latvian meat processor based in Lielvārde. The roll is made from whole chicken fillet, shaped and hot-smoked to give a firm, sliceable texture and a mild smoky flavour. Serve cold on an open sandwich, alongside pickles, or as part of a charcuterie board.
The name “Gardums” means “delicacy” in Latvian — a nod to the product’s clean, unfussy character.
