What it is
Gurmanu (“for the gourmet”) is ADAZI’s smoked pork chop — a boneless cut of pork loin (karbonade), brine-cured with spices and smoked until the surface takes on a deep amber crust. The interior stays a pale rose, the texture firm but yielding, with a clean, lightly salty finish and the unmistakable sweet smoke note of Latvian smokehouse tradition.
Made by Gaļas nams “Ādaži”, named for the small town of Ādaži just north of Riga, this is one of the staples of the Latvian deli counter. Slice it thinly off the chub, fanned across dark rye with grainy mustard and a slice of dill-pickled cucumber; pile it into a ploughman’s lunch alongside hard cheese and pickled onions; or chop it into a creamy potato salad. It is also excellent diced into a bean soup or a pot of summer borscht at the very end of cooking, where its smoke perfumes the broth without overpowering it.
