What it is

Medovik, the layered honey cake, is one of the best-loved cakes in Ukraine and across the former Soviet countries. This one comes from the Ukrainian confectionery house Vatsak: soft sponge layers made with natural honey, soaked in a yogurt cream with a light note of white chocolate, and finished with a coat of honey-sponge crumbs.

The whole 1.9 kg cake comes ready-cut into 16 portions of about 118 g each, so you can take out as many slices as you need, whether for a birthday table or a week of tea breaks. Defrost it in the fridge so the sponge and cream keep their best texture.
