What it is
Pink salmon (gorbusha) from Pacific waters, sliced into thin strips and woven into the characteristic “kosichka” braid before cold-smoking at low temperatures. Cold smoking preserves the natural oils and delicate texture of the fish while drawing out a deep amber colour and a clean, rounded smoke flavour.
