What it is
Green buckwheat is the same groats as classic brown grechka — harvested and hulled, but never roasted or steam-treated. That one missing step changes everything: the kernels keep their pale pistachio colour, a milder, fresher, gently nutty taste, and more of what the grain naturally came with. These groats are milled by Skviryanka, the grain products plant in Skvyra, Kyiv region.
Cook it the manufacturer's way: soak the rinsed groats in cold water for an hour, then simmer for 10 minutes in salted water and let them rest under the lid. Or skip the stove entirely — green buckwheat sprouts readily in a day or two and makes a crunchy base for salads and breakfast bowls.
