What it is
Zefir is the Eastern European answer to the marshmallow — airy, pillowy, and far more delicate than its Western counterpart. Made with apple purée, beaten egg white, and agar-agar, then coated in a thin chocolate glaze, each piece has a soft, yielding centre with a satisfying snap. A natural companion to a strong cup of tea.
