What it is
Nizhyn (Nezhin) in northern Ukraine has grown cucumbers for preservation since the 18th century, and the Nizhyn cannery — operating since 1927 — has kept that tradition alive through every generation. These cucumbers are packed in a classic marinade of dill, garlic, and whole spices, then sealed and pasteurised to lock in their characteristic crunch. Serve straight from the jar alongside grilled meats, cold cuts, or boiled potatoes — or chop them into an Olivier salad or a pot of rassolnik.
