What it is
Adjika Abkhazuri is the most traditional form of adjika from the Caucasus — a concentrated hot pepper and herb paste with no tomatoes. Where the Russian-style adjika familiar from Soviet-era kitchens is mild and tomato-forward, this Abkhazian version is bold: fiery, deeply aromatic, built on red chilli, garlic and the herb blends of Western Georgia. Mimino's recipe stays close to the original.
Spread on rye bread or lavash; serve alongside shashlik, grilled meats and kebabs; stir a teaspoon into soups and broths for warmth; use as a marinade base for chicken or lamb. Concentrated — start with a small amount.
