What it is
Briushina (брюшина) is the belly cut from the pig — streaky, with alternating ribbons of meat and fat. Germes salt-cures the slab the traditional way, then smokes it over hardwood until the skin turns deep amber and the smoke runs all the way through.
Germes is a long-standing Lithuanian meat producer (also seen on UK shelves under the “3 Little Pigs” label) with a reputation for clean recipes and proper slow-smoking. This belly slab is meant to be eaten cold — sliced thin against the grain on dark rye, with mustard, with raw onion and vodka, or chopped into a hot borshch for smoky depth.
