What it is
Matje Classic is IRBE's take on the Matje style of herring — a centuries-old Nordic tradition in which young, fat Atlantic herring fillets are cured in a mild brine with their own enzymes, producing a silky, delicate texture that ordinary salt-pickled herring simply cannot match.
IRBE is a Latvian fishing company based in Roja on the Latvian coast, founded in 1998. The herring is caught in the North Atlantic (FAO fishing area 27) and processed in Latvia, then packed in rapeseed oil for a clean, mellow finish. Serve straight from the jar with rye bread and onion, or fold into a simple potato salad.

Atlantic herring fillet (Clupea harengus, FAO-27, 67.3%), rapeseed oil (32.7%), water, salt, sugar, acidity regulators (sodium citrate, citric acid, glucono-delta-lactone), dextrose, flavour enhancer (monosodium glutamate), preservatives (potassium sorbate, sodium benzoate).
