What it is

Siberian sturgeon ( Acipenser baerii ) is one of the most prized freshwater fish in Eastern European cuisine — firm-fleshed, richly flavoured, and historically reserved for celebratory tables. This fillet is hot-smoked at high temperature, which gently cooks the flesh while infusing it with a deep, golden smoke character. The skin is left on during smoking to lock in moisture and protect the delicate fat layer beneath, resulting in a fillet that is moist, tender, and full of natural flavour.

Serve sliced on rye bread, alongside creamed horseradish or pickled cucumber, or as the centrepiece of a seafood platter. Exceptional with chilled vodka or a dry white wine.
