What it is
The Yozhik (hedgehog cookie) is a much-loved treat across Russia and Ukraine. A small, hand-shaped shortcrust pastry is moulded to look like a hedgehog, baked to a tender crumb, then dipped in dark chocolate glaze. Crispy wafer or nut pieces are pressed into the surface to mimic spines, giving the cookie its distinctive look. Sold individually, one piece per portion — a classic bite-sized treat.
