What it is
Food gelatin is a pure protein powder made by hydrolyzing collagen from pork and/or bovine skins and bones. It dissolves in warm water and sets firm as it cools, giving classic jellies, panna cotta, mousses, glazes and aspic their characteristic texture. One 80 g pack typically sets around 4–8 litres of liquid depending on firmness.
