What it is
Cornette rigate — ridged, horn-shaped tubes — are one of the most versatile pasta shapes in the Eastern European kitchen. Their ridged surface grips sauce well, and the hollow centre catches chunky meat ragu or thick tomato sauces equally well.
Made by Dobeles Dzirnavnieks, a Latvian mill with roots stretching back generations, these pasta are produced exclusively from durum wheat semolina — the same high-gluten grain used by Italian pasta makers. The result is a firm, golden pasta that holds its shape even when cooked al dente.
