What it is
Šakotis is Lithuania's celebration cake. A batter of eggs, butter and flour is poured over a spit turning above an open fire, one thin layer at a time, and the drips set into the spiky branches that give it its name — šakotis means "branched". Cut across, it shows rings like a tree trunk, which is why it is called Tree Cake, and why its German cousin is Baumkuchen. This is the classic recipe from Danutės Šakotis, a family bakery that has been baking šakotis for almost a hundred years.
Rich and only lightly sweet, with a crisp tip on every branch and a close, tender crumb inside. Stand it upright and break off the branches, or slice it into rounds across the trunk — with tea or coffee. Each cake is baked by hand, so it is sold by weight: expect around 600 g.
