What it is
Turistichesky Zavtrak, the Tourist's Breakfast, is one of the original Soviet camping rations: coarsely cut pork shoulder lightly cured with salt and nitrite, seasoned with garlic and black pepper, then sealed hot in the tin and cooked through so the meat sets into its own savoury, lightly jellied broth. The recipe goes back to the 1960s, when factories across the USSR turned out the same blue and red label for fishing trips, mountain camps and the long sleeper trains to Vladivostok.
Biovela, the meat processor from Vilkaviskis in Lithuania, still makes the proper 240 g format. Eat it cold straight from the tin with rye bread, mustard and a sliced onion the way it was always meant to be eaten over a thermos of tea; or warm it through with potatoes and dill, fold it into scrambled eggs, layer it onto buttered toast, or stir a tin through hot buckwheat for a one-pan supper. No fridge, no fuss, no cooking required.
