What it is
A Latvian take on the classic Doktora sausage, produced by Adazi in Latvia. Finely ground, gently spiced, and enriched with egg for a distinctly smooth, slightly creamy bite.
Slice cold for open sandwiches, fry briefly until lightly coloured, or warm in water. The texture holds well in all three uses.
