What it is
Abrau-Durso is the historic name in Russian sparkling wine: an estate founded in 1870 on the shores of Lake Abrau in the hills near Novorossiysk, where the cool tunnels have been turning out sparkling wine since imperial times. «Reserve» Brut is the house's dry white cuvée — a blend of Chardonnay, Riesling and Pinot Blanc from Krasnodar vineyards, made bright and fresh rather than heavy.
In the glass it is pale gold with a fine, persistent perlage. The nose brings green apple, Williams pear and acacia blossom with a light honeyed note; the palate is crisp and well structured, finishing on lime zest and lemon. A proper brut — dry, clean and very easy to keep pouring.

Serving & pairing
Chill well and pour as an aperitif, or set it next to seafood and light starters. Its natural partner, though, is the classic zakuska spread — blini with caviar or smoked fish — where the brisk acidity does exactly what it should.
